- Definition of "Kobe Meat / Kobe Beef" (Kobe Beef Marketing & Distribution Promotion Association): Tajima cattle that are heifers that have never calved or steers, with a yield and meat quality grade of "A" or "B" and grade 4 or above, a BMS marbling value of No. 6 or above, and a carcass weight of 270 kg to 499.9 kg for cows and 300 kg to 499.9 kg for steers. If there is a defect in the carcass, a livestock consignment company commissioned by the association checks and makes the judgement.
- Definition of Tajima beef (same association): Cattle raised from Tajima cattle bred exclusively through successive generations of Hyogo Prefecture-owned sires, reared and managed within Hyogo Prefecture and shipped to a meat center within the prefecture, being heifers or steers aged 28 to 60 months with a yield and meat quality grade of "A" or "B" and grade 2 or above.
- Certified head counts (published figures): The number of cattle certified as Kobe Beef was 6,820 head in fiscal 2024 (preliminary figure). It was 6,846 head in fiscal 2023, 6,623 head in fiscal 2022 and 6,298 head in fiscal 2021, with a target of 7,200 head for fiscal 2030. Exports came to 47.3 tonnes in fiscal 2024. There were 13,577 Tajima breeding cows in fiscal 2024.
