One is "kabuse cultivation": about one to two weeks before the new shoots are picked, they are covered with black fabric to block out sunlight, which prevents the leaves from hardening, keeps the green vivid, and draws out a distinctive aroma along with a mellow umami and sweetness. The other is "deep-steaming processing." While the usual steaming time is about 30โ€“40 seconds, deep steaming extends this to approximately 60โ€“120 seconds, resulting in a tea that brews to a deep green color and has suppressed bitterness and astringency, with a sweet, rich flavor. The deep green that photographs so beautifully is the product of these two labor-intensive steps.

The growing environment is also unique. The hilly terrain created by mountains and sea generates frequent mist, which is said to protect the tea leaves from UV rays and promote the production of umami components. The soil is volcanic ash deposited from a caldera, providing excellent drainage and an abundance of minerals.
