During the deep cold of the mainland winter, the southern paradise of Kagoshima shines brightest. With few days when the average temperature drops below 10ยฐC and many clear, sunny days, the mild climate welcomes travelers with open arms. Satsuma mandarin oranges (unshuu mikan) and ponkan mandarins reach the peak of their harvest season, and seasonal gourmet food fills the local tables. During this period, tourist crowds are relatively thin, meaning you can savor famous hot springs and scenic spots in peaceful comfort โ€” a luxury unique to winter travel. For those who dislike crowds and seek an authentic travel experience, Kagoshima in winter is a destination I strongly recommend.

Buri Shabu (Yellowtail Shabu-Shabu)

There is one dish that is absolutely indispensable when talking about winter in Kagoshima. That is buri shabu โ€” yellowtail shabu-shabu. The moment you swirl a slice of fat-laden winter yellowtail very briefly through steaming hot dashi broth โ€” watching the pale pink flesh just beginning to turn white โ€” and bring it to your mouth, a gentle, sweet richness melts across your tongue. This is the supreme flavor that Kagoshima Bay (Kinko Bay) produces in winter.

The yellowtail of Kinko Bay fattens up in the cold winter waters, developing a richness and depth of flavor that reaches its absolute peak from December through February. The fat is not heavy or cloying โ€” it is silky, sweet, and remarkably clean, leaving no sense of greasiness at all.

Buri shabu restaurants in Kagoshima City serve this seasonal specialty with a light, refined dashi broth that does nothing to obscure the fish's natural flavor. Dipped in ponzu (citrus soy sauce) or with freshly grated daikon radish, each slice is a revelation.

Where to eat: Seafood restaurants in Kagoshima City, particularly in the Tenmonkan and waterfront areas. Advance reservations are recommended.

Best season: Decemberโ€“February.

Tip for travelers: More and more izakaya in the city serve it, but if you can, choose a restaurant specializing in local cuisine where residents go, and you can enjoy a fuller course that pairs it with buri tataki (seared yellowtail) and black pork dishes. Most such places set out plenty of condiments such as spring onion and grated ginger, so help yourself freely.

Satsuma Mandarin (Unshuu Mikan) and Ponkan Citrus

While the mainland shivers, Kagoshima's citrus orchards are at their most bountiful. The Satsuma mandarin (unshuu mikan) โ€” Japan's most popular winter citrus โ€” reaches peak sweetness in Kagoshima from November through January. Ponkan mandarins, with their deeper flavor and slight floral aroma, follow in January and February.

The citrus orchards dotting the hillsides of the Satsuma Peninsula and the Osumi Peninsula are fragrant with the scent of fresh citrus on winter mornings, and local fruit stands sell freshly harvested mandarins at prices that would astonish any city dweller.

Where to buy: Roadside stations (Michi-no-Eki) and direct farm sales throughout the Satsuma Peninsula and the area around Ibusuki.

Kagoshima Black Pork (Kurobuta) Dishes

Winter is also the ideal season for Kagoshima's most celebrated culinary product โ€” kurobuta (black pork). The Berkshire pigs raised in Kagoshima develop an exceptional richness and sweetness in the cold season. Whether enjoyed as shabu-shabu, tonkatsu (breaded cutlet), or slow-braised kakuni (simmered pork belly), kurobuta in winter is at its most flavorful.

Many ryokan (traditional inns) and restaurants in Kagoshima City offer winter dinner courses built around kurobuta dishes โ€” the perfect centerpiece of a winter Kagoshima meal.

Winter in Kagoshima combines mild southern weather, the peak of the citrus harvest, jewel-like yellowtail from Kinko Bay, and the unmatched richness of Berkshire pork. It is a season that rewards those who seek it out.

Tip for travelers: For a sand bath you wear a yukata provided by the facility (at the Sand Bath Hall "Saraku" the yukata is included in the price). Follow the facility's instructions for changing and for handling towels. The sand itself is warm, but on windy days your face can get cold, so a light stole or a hat makes it more comfortable.

Tip for travelers: Whale watching takes you out onto the open sea, so on windy days trips may be cancelled or the boat may pitch heavily. Taking motion sickness medicine beforehand and a waterproof, windproof windbreaker are essential. An encounter with whales is not guaranteed. How operators handle it when no whales are seen (whether they offer another trip or a refund) differs from operator to operator, so always check each company's terms before you book.

Practical Information for Your Visit

  • Best time to see it / best season: Winter is the season for wild yellowtail. Among the citrus fruits, the "Sakurajima Komikan" mandarin grown in Kagoshima City (registered as a national GI product) ripens in early December, with the harvest running for about a month from late November to late December. The humpback whales off Amami Oshima can usually be seen from late December to around early April, with the peak said to be from mid-January to late March.
  • Prices: At the Sand Bath Hall "Saraku" in Ibusuki, the sand bath costs 1,500 yen for adults (junior high school students and older) and 800 yen for children (elementary school age and younger), including the cost of the yukata (this varies according to the set you choose). For whale watching in Amami, prices and courses differ from operator to operator.
  • Access: To reach Ibusuki, the limited express "Ibusuki no Tamatebako" takes about 55 minutes from JR Kagoshima-Chuo Station to Ibusuki Station (all seats reserved, so you need to reserve a seat in advance; 3 round trips a day). For Amami Oshima there are flights from Kagoshima Airport to Amami Airport, as well as a ferry from Kagoshima New Port to Naze Port taking about 11 hours (operated alternately by Marue Ferry and Marix Line). There is no regular high-speed boat service between Kagoshima and Amami Oshima.
  • Parking: The Sand Bath Hall "Saraku" has free parking for about 90 ordinary cars. It can fill up at busy times.
  • Clothing and equipment: Winter in Amami has a climate close to early spring on the mainland and a heavy coat is not needed, but whale watching takes you out onto the open sea, so a waterproof, windproof windbreaker and motion sickness tablets are essential. For the sand bath in Ibusuki you wear a yukata provided by the facility.

* Depending on your state of health, you may not be able to use the sand bath. Saraku states that it cannot be used by women who are menstruating, people with high blood pressure (180/100 mmHg or above), people with heart disease, arrhythmia, angina or lung disease, people who are pregnant, feverish or suffering from inflammation, and people fitted with a pacemaker. The guideline for time spent buried in the sand is about 10 minutes, and if you feel unwell you should tell the staff immediately. Avoid bathing after drinking alcohol.

* Food hygiene warning: When eating raw fish, as in yellowtail shabu-shabu or sashimi, care is needed against food poisoning caused by the anisakis parasite. The Ministry of Health, Labour and Welfare gives visual inspection, freezing at -20 degrees C for 24 hours or more, or heating to 70 degrees C or above right through to the centre (or 60 degrees C for 1 minute) as preventive measures. Vinegar, salt, soy sauce and wasabi do not kill anisakis. Torisashi (raw chicken), a Kagoshima speciality, carries a risk of campylobacter food poisoning, and as there are no standards to ensure the safety of chicken for raw consumption, the Ministry of Health, Labour and Welfare urges that children, the elderly, pregnant women and people with weakened immunity in particular avoid eating it raw. If you experience severe abdominal pain, vomiting, fever or diarrhoea after eating, seek medical attention promptly.

* Whale watching does not guarantee an encounter with whales, and trips are cancelled in rough weather. How operators handle it when no whales are seen (whether they offer another trip or a refund) differs from operator to operator, so check before you book.
