Loved around Tokorozawa on the Musashino Plateau, Musashino udon is known for thick, dark, chewy noodles with real backbone. On a plateau poorly suited for rice, wheat was grown, and udon came to support the staple diet of the people. The fragrance of local flour and a chew that can tire the jaw give it a presence unlike any other.

Highlights

The basic style is tsuke udon, where cold noodles are dipped into a warm, robust broth. Simmered with pork, green onion, and seasonal vegetables, the broth runs deep with savor and clings firmly to the thick noodles. Savoring the rough, sturdy texture of the noodles is the true delight of this land.

Centered on Tokorozawa Station on the Seibu lines, popular shops dot the surrounding area. Many are freestanding houses on the outskirts, and quite a few people visit while out for a drive. At shops that use local flour, you can also enjoy the difference in the noodles fragrance.

The thick noodles are more filling than expected, so ordering a modest portion is wise. Coat the noodles well in the broth to fully enjoy their powerful chew.
