Hakata Ramen
Fukuoka's signature dish features a rich tonkotsu (pork bone) broth with thin noodles. The unique kaedama system lets you order extra noodles when you finish.
Motsu Nabe
A hot pot made with fresh beef or pork offal, chives and cabbage simmered in a rich broth. Packed with collagen and umami flavor.
Yatai Street Stalls
Around 100 outdoor stalls line the Nakasu, Tenjin and Nagahama areas, serving ramen, oden and yakitori under the night sky.
Mentaiko
Spicy pollock roe is Fukuoka's most famous export. The original style is more complex than versions sold elsewhere in Japan.
Mizutaki
A traditional Hakata chicken hot pot. Whole chicken is simmered for hours to create a milky white broth enjoyed with ponzu sauce.
Access
Most famous restaurants are near Hakata Station, Nakasu and Tenjin. Yatai stalls open in the evening and stay open late.
