Fukaya Green Onion

Grown on the fertile land between the Tone and Ara Rivers, Fukaya green onion is a brand vegetable known across the country. The fine soil and the sharp temperature swings of the region create the sweetness and tenderness of its white stalk. When heated it turns almost melting in texture, releasing a natural sweetness that spreads across the palate.

Highlights

The length and beauty of the white stalk, built up by farmers who mound soil around each plant again and again, is a sight in itself. Simply grilled it becomes a feast, and dropped into a hot pot it soaks up the savory broth for an even deeper flavor. Local farm stands offer freshly dug onions at their best.

Enjoying the Seasons

The sweetness peaks in winter when frost settles on the fields. Exposed to the cold, the onion stores up sugar and grows surprisingly sweet. Grilled onion, skewers brushed with miso, and the final course of a hot pot are all pleasures unique to the season.

Access and Basic Information

JR Takasaki Line Fukaya Station is the gateway. The brick station building is famous for echoing the design of Tokyo Station. Farm stands and local eateries dot the city, and in season you can taste dishes made with Fukaya green onion all around town.

To carry it home, wrap it in newspaper and store it upright to keep it fresh longer. When grilling, avoid over charring so the sweetness can shine.
