Sanzoku-yaki

Sanzoku-yaki is a specialty of central Nagano in which a chicken thigh marinated in garlicky soy sauce is dusted with starch and boldly fried. Loved mainly in Matsumoto and Shiojiri, its generous single-cut portion and savory aroma stir the appetite. There are several theories about the name, and it is deeply rooted in the regions food culture.

Because a thick chicken thigh is fried whole, you enjoy a crisp exterior and juicy interior. The marinade and frying differ by shop, giving each its own character in garlic strength and crust thickness. It is often served as a set meal with shredded cabbage and rice.
