Hatoshi

Hatoshi is a fried treat unique to Nagasaki, made by sandwiching shrimp paste between slices of bread and deep-frying it. Originally arriving from China, it became a beloved part of Nagasaki shippoku banquet cuisine. Crisp and fragrant outside, with a soft interior packed full of shrimp savor, one bite and it is hard to stop.

Highlights

The greatest appeal is the pairing of freshly fried bread and the sweetness of shrimp. The crunchy bread, standing in for batter, and the plump paste create contrasting textures. Recently, variations have appeared in which shops add fish paste or vegetables to the shrimp, each with its own inventive touch.

Enjoying the Seasons

It is a light snack you can enjoy all year, perfect for eating on the go. It is best savored while warm, but in the outing season enjoying it amid the scenery is also delightful. It goes wonderfully with tea or beer.

Access and Basic Information

You can taste it in Nagasaki Shinchi Chinatown, at delicatessens around the city, and at shippoku restaurants. Easy to reach by streetcar from JR Nagasaki Station, it is popular as a walk-and-eat treat.

A Quick Tip

It is most delicious piping hot and freshly fried, so savoring it on the spot is best. Since it is easy to eat, it also makes a fine starter before a bowl of champon or a plate of sara udon.
