Among all of Niigata, the Koshihikari rice grown in the Uonuma district is regarded as the pinnacle of Japanese brand rice. Pure snowmelt water flowing from deep snowy mountains, combined with the sharp temperature swings of the basin, creates plump grains and a gentle sweetness.

Freshly cooked, each grain stands upright and gives off a faint sheen. The natural sweetness that spreads as you chew is so satisfying that side dishes feel almost unnecessary. Local farm stands and roadside stations sell freshly milled new rice.
Enjoying the Seasons
During the autumn harvest, golden terraced paddies stretch across the hills and sales of new rice begin. In winter, rice aged in snow cellars appears, offering an especially mellow flavor. Spring and summer bring the scenery of rice planting and lush green stalks.

Vacuum packed new rice makes an excellent souvenir. Once home, cook it slightly firm and first savor the aroma and sweetness with plain white rice alone.
