Karashi Mentaiko

Spicy and savory, karashi mentaiko is a staple Hakata souvenir. It is said to have begun in 1949, when a founder who returned from Manchuria adapted a pickled cod roe he had enjoyed in Busan to suit Japanese tastes. Because pollock is called myeongtae in Korean, the roe was named mentaiko, meaning its child. It pairs superbly not only with fresh rice but also with pasta and rice balls.

Seasonal Enjoyment

In the cold season the roe is full and rich, making it a welcome gift. In summer, set it beside chilled somen or over tea soaked rice and the meal goes down easily even when appetite fades.

A Little Advice
