Noto Seafood

The rugged Noto Peninsula produces outstanding snow crab, yellowtail, Noto oysters and sweet shrimp.

Jibu-ni

Kanazawa's signature dish โ€” duck or chicken dusted with wheat flour and simmered in dashi. Elegant and subtle.

Kanazawa Oden

Kanazawa is celebrated as an oden city. Crab shell, ivory shell, red fish cake and wheat gluten are unique local ingredients.

Kaga Cuisine

The refined cuisine of Kanazawa's castle town, developed under the wealthy Maeda clan.

Hachiban Ramen

An Ishikawa-born ramen chain. The signature vegetables-in-broth style is mild, filling and comforting.

Access

Kanazawa's Omicho Market has many restaurants. Noto seafood is best in Wajima and Anamizu from autumn through spring.
