Hakozushi Pressed Sushi

Hakozushi is a traditional Osaka pressed sushi made by packing vinegared rice and toppings into a wooden mold and pressing them firmly together. Unlike the hand formed sushi of Edo, it is known for its neat square shape and the beautiful layered cross section, with shrimp, conger eel, and white fish arranged in colorful rows. Its refined, carefully prepared flavor has long made it a favorite for celebrations and gifts.

Highlights

- The trim square shape and lovely cross section formed in a wooden mold - Colorful combinations of toppings such as shrimp, conger eel, and sea bream - The craft of cutting each piece carefully and evenly - Flavors that settle over time, making it well suited to takeout

Enjoying the Seasons

Hakozushi has long been enjoyed as a boxed meal for celebrations and outings, prized during spring blossom viewing and the autumn excursion season. Seasonal fish add a sense of the time of year, and all year round it brings color to festive occasions in Osaka.

Access and Basic Information

- Area: long established sushi shops around Namba and Shinsaibashi - Access: walking distance from Namba or Shinsaibashi Station on the subway - Price range: from around 1500 yen per box - Boxed orders are available for gifts and souvenirs

A Quick Tip

Hakozushi keeps better than hand formed sushi and looks elegant, making it perfect as a gift. Letting it rest a little rather than eating it right away lets the flavors settle, so you can better enjoy the harmony of layered toppings and vinegared rice.
