Sanuki Udon
You cannot talk about Kagawa without Sanuki udon. A firm chew, a silky slide down the throat, and a fragrant broth drawn from iriko (dried sardines) come together in perfect balance. The prefecture is packed with hundreds of specialist shops, and locals proudly call their home the Udon Prefecture.

Many shops use a self-service style where you boil your own noodles, fill the bowl, and add toppings. The ways to eat it are wonderfully varied, from kake and bukkake to kamatama and plain soy. At Nakano Udon School near the foot of Kotohira Shrine, you can even knead and stomp the dough yourself.

In summer, chilled bukkake shows off the springy texture, while in winter a piping hot kake or vegetable-rich shippoku warms you through. Touring shop after shop to compare each one is a beloved local pastime.
