Nagano is renowned across Japan as a home of fine soba, where a cool climate and pure water grow rich buckwheat. Shinshu soba, exemplified by the Togakushi style, is prized for its fragrance and smooth, thin strands. From the city of Nagano to mountain villages, you can meet a bowl with its own character in every district.

The Togakushi presentation called botchi-mori, where noodles are served in small neat mounds, is beautiful to behold, and condiments such as spicy grated radish and fresh wasabi lift the flavor. Many shops uphold the three-fresh ideal of freshly milled, freshly cut, and freshly boiled, so comparing each shops dipping broth is a pleasure.

The new-crop season in autumn brings an exceptional aroma, and harvest festivals are held around November in many areas. In summer, chilled zaru soba is refreshing, while in winter a warm bowl of kake or tororo soba warms the body, so the experience shifts with the year.

Within Nagano city, fine shops cluster near Nagano Station and along the approach to Zenko-ji Temple, making them easy to combine with sightseeing. Togakushi is reachable by bus from Nagano Station, letting you savor soba amid rich nature.

Popular shops grow crowded at lunch, so aim for just after opening or an earlier hour. During the new-crop season noodles can sell out, so an early visit is wise.
