Shinshu Soba

Grown at high altitude with clear mountain water, Nagano's soba has outstanding aroma and nutty flavour.

Oyaki

A Nagano country dumpling β€” vegetable fillings such as nozawana pickle, pumpkin or eggplant miso wrapped in wheat dough and griddled or steamed.

Sanzoku-yaki

Matsumoto's own creation β€” marinated chicken thigh deep-fried to a crackly crisp exterior.

Nozawana Pickles

Originating in Nozawaonsen village, this salted mustard green is Nagano's most famous pickle.

Horse Sashimi

Widely enjoyed in southern Nagano, fresh horse is served raw with garlic soy sauce.

Access

Nagano and Matsumoto cities have many soba and local restaurants. Nozawana pickles are best at the village shop.
