Ebimeshi is Okayama soul food of rice and shrimp fried in a dark, savory sauce. It is said that a chef who had roots in curry rice learned it at a Tokyo shop, brought it back to Okayama, and developed it in his own way. Today it is a standard menu item enjoyed at cafes and specialty shops in the city.
