Ebimeshi is Okayama soul food of rice and shrimp fried in a dark, savory sauce. It is said that a chef who had roots in curry rice learned it at a Tokyo shop, brought it back to Okayama, and developed it in his own way. Today it is a standard menu item enjoyed at cafes and specialty shops in the city.

Highlights

The springy texture of the shrimp pairs perfectly with the black rice stir-fried in a special sauce blending demi-glace and caramel. Despite its striking appearance, the sweetness and richness of the sauce give it a somehow nostalgic flavor. Serving it with a fried egg and salad is the standard style.
