Omi Gyu
Shigas pride, Omi beef ranks among Japans three great wagyu alongside Matsusaka and Kobe. Raised carefully in the rich environment around Lake Biwa, it is often called Japans oldest branded wagyu with a history spanning more than 400 years.

The greatest appeal is its fine marbling and a tenderness that seems to melt in the mouth. The low melting point of its fat brings an elegant sweetness and mellow umami. It shines in sukiyaki, shabu shabu, and steak alike.
