Nikko soba is buckwheat noodle nurtured by the cool climate and abundant clean water of Nikko City in Tochigi. The high elevation and wide swing between day and night temperatures suit the cultivation of fine buckwheat, yielding a fragrant bowl with a smooth finish. Many shops also serve soba topped with the local soy milk skin, making it a perfect regional taste to round off a tour of the shrines and temple.

During the new buckwheat season popular shops get crowded, so visiting off peak lets you enjoy it calmly.
