Sano ramen is a local noodle dish deeply rooted in Sano City, Tochigi. It is defined by flat, wavy noodles made by the aodake uchi method, in which the dough is stretched by pressing it with a green bamboo pole, and by a clear soy sauce based soup. Light yet full of depth, it is loved by everyone from children to the elderly.

The most striking sight is the unique noodle making, in which an artisan rides a green bamboo pole and presses the dough with their body weight.
