Doteni is a Nagoya regional dish of pork or beef offal slowly simmered in bean miso. The name is said to come from piling miso like a bank around the pot and simmering while letting it char. Offal turned meltingly tender soaks up the sweet, savory richness of the miso, making it a dish that pairs well with sake.
