Tonburi
Made from the ripe seeds of the broom cypress, which are boiled, rinsed, and carefully processed, tonburi is a specialty of the Hinai area of Odate in Akita. Glossy black with a popping texture, its appearance earns it the nickname caviar of the fields. Mild in taste, its distinctive texture enhances many dishes.
