Fugu (Puffer Fish)

Shimonoseki handles more fugu than any port in Japan. Tetchiri, tessa, karaage and hirezake sake are all classic preparations.

Kawara Soba

A Kawatana Onsen speciality โ€” green tea soba and toppings grilled on a hot traditional roof tile. Unusual, fun and delicious.

Uiro (Yamaguchi Wagashi)

Yamaguchi's soft steamed sweet โ€” subtly sweet and smooth. Very different from Nagoya's uiro.

Iwakuni Sushi

Iwakuni City's pressed festival sushi โ€” layers of lotus root, egg, shrimp and burdock create a colourful mosaic when sliced.

Kencho

A simple Yamaguchi home-cooked dish โ€” daikon, tofu, burdock root stir-fried in sesame oil and simmered in soy and sugar.

Access

Shimonoseki's Karato Market area is excellent for fugu restaurants. Kawatana Onsen serves kawara soba at local inns.
