Yamaguchi's soft steamed sweet โ subtly sweet and smooth. Very different from Nagoya's uiro.
Iwakuni Sushi
Iwakuni City's pressed festival sushi โ layers of lotus root, egg, shrimp and burdock create a colourful mosaic when sliced.
Kencho
A simple Yamaguchi home-cooked dish โ daikon, tofu, burdock root stir-fried in sesame oil and simmered in soy and sugar.
Access
Shimonoseki's Karato Market area is excellent for fugu restaurants. Kawatana Onsen serves kawara soba at local inns.
