Shimonoseki Fugu

🐑 Yamaguchi|July 2, 2026

Shimonoseki Fugu

Shimonoseki, the westernmost port town of Honshu, handles more pufferfish than anywhere else in Japan. Locals call it fuku, a play on the word for good fortune, and it has long been a treasured centerpiece of winter dining.

Highlights

Tessa, sashimi sliced so thin the plate pattern shows through, is the peak of a chefs skill. From springy flesh and crisp karaage to grilled milt and a closing rice porridge, every part of the fish is enjoyed.

Enjoying the Seasons

The prime season runs from the cold months of October through March when the flesh is firm. At Karato Market you can casually enjoy fresh fugu dishes and sushi amid a lively auction atmosphere.

Access and Basic Information

About ten minutes by bus from JR Shimonoseki Station toward Karato. Specialty shops cluster around Karato Market overlooking the Kanmon Strait.

A Quick Tip

Pairing it with hirezake, warm sake steeped with grilled fins, deepens the aroma and brings out the flavor of the fish.
