This is a signature confection of Yamaguchi, where the Ouchi culture once flourished. While ordinary uiro uses rice flour, the Yamaguchi version is distinctive for using bracken starch, which gives it a uniquely smooth and chewy mouthfeel.

Highlights

Its springy bounce and refined sweetness are its heart. It comes in colorful varieties such as matcha, red bean, and plain, and the beautiful cut surface is a pleasure too. Some keep well and make welcome souvenirs.
