Iwakuni Zushi

This pressed sushi comes from Iwakuni, the castle town famous for the arched Kintaikyo Bridge. Layers of vinegared rice and toppings are packed into a large wooden frame under a weight, then cut and served as a celebratory dish.

Highlights

Lotus root, shiitake, shredded egg, and seasoned fish flakes form colorful layers, so each slice looks like a brocade painting. The bold scale and beautiful colors are its charm.

Enjoying the Seasons

It is available year round, but the flavor is finest from autumn to winter when local lotus root is in season. It is a must at flower viewing and festivals.

Access and Basic Information

About twenty minutes by bus from JR Iwakuni Station to Kintaikyo Bridge. Restaurants and souvenir shops near the bridge serve it.

A Quick Tip

Iwakuni lotus root has many holes and is seen as lucky. Look for its crisp texture as you eat.
