Matsuyama Taimeshi
One of the signature local dishes of Matsuyama is Matsuyama taimeshi. Fresh sea bream caught in the Seto Inland Sea is cooked whole together with rice, allowing the flavor of the fish to spread throughout the grains. Even within Ehime, the preparation differs from the Uwajima version, and Matsuyama keeps the classic cooked-in style.
