Uwajima style: raw sea bream sashimi with an egg-and-dashi sauce poured over rice. Matsuyama style: sea bream slow-cooked into a fragrant rice.

Jyako-ten (Fish Cake)

Small silver fish ground and deep-fried into flat cakes β€” Ehime's everyday comfort food. Eaten plain, in udon soup or as a grilled snack.

Ehime Citrus

Ehime leads Japan in citrus production. Ponkan, Beni Madonna, setoka and iyokan are available from autumn through spring.

Iyo-beef & Hime-ko Jidori

Ehime's branded wagyu and native chicken are available at yakiniku restaurants and local inns.

Dogo Senbei

A delicate, thin cracker from Dogo Onsen β€” one of Japan's oldest hot spring resorts.

Access

Matsuyama City and Dogo Onsen have many restaurants. Uwajima-style tai-meshi is best in Uwajima City.
