Hida Beef

Gifu's premium wagyu is one of Japan's finest โ€” finely marbled and richly flavoured.

Keichan (Kei-chan)

A farmhouse dish from Hida โ€” chicken thigh marinated in miso or soy sauce, grilled with cabbage.

Hoba Miso

A uniquely Hida dish โ€” miso with spring onions and mushrooms grilled on a dried magnolia leaf over a charcoal burner.

Gohei Mochi

An ancient Nakasendo road food โ€” pounded rice patties coated in sweet walnut miso and grilled until fragrant.

Mitarashi Dango

Gifu's own style of the classic soy sauce rice dumpling skewer โ€” widely available in Takayama.

Access
