Tosa Akaushi
Tosa Akaushi is a rare brand of brown-haired wagyu raised in the mountains of Kochi. With few head raised nationwide, it is known for a deep lean umami paired with a gentle sweetness of fat, a flavor favored by connoisseurs.
Highlights
Rather than heavy marbling, the appeal is the savory depth of the lean meat that spreads as you chew. The healthy grazing-based rearing shows in the meat quality, and the refined fat is said to sit lightly on the stomach. It is enjoyed as steak, lightly seared, or in shabu shabu.Enjoying the Seasons
It can be enjoyed year round, but in the cooler season a hot pot or shabu shabu is exceptional, as the lean umami melts into the broth. In summer a light seared style is also lovely.Access and Basic Information
The main production areas are the mountainous towns of Otoyo and Motoyama in the Reihoku region, and it is served at specialty restaurants in Kochi City. A reservation in advance is recommended.A Quick Tip
First try it with salt to taste the lean meat itself. Do not overcook it; medium rare brings out its true character.📍 Location & Access
