Masu no Sushi

Toyama's signature pressed sushi β€” cherry salmon laid over seasoned rice, wrapped in bamboo leaves inside a circular wooden box.

Shiro-ebi (White Shrimp)

Called the "jewel of Toyama Bay" β€” these translucent shrimp are found nowhere else. Sweet and delicate as sashimi.

Buri (Yellowtail) Shabu-shabu

Winter yellowtail from Toyama Bay is sliced paper-thin and briefly dipped in hot broth. The fat melts on the tongue.

Toyama Black Ramen

Toyama City's distinctive ramen with jet-black soy sauce broth and thick noodles.

Hotaru Ika (Firefly Squid)

In spring, glowing firefly squid come ashore in Toyama Bay. Eaten as vinegar-miso dressed salad, marinated or tempura.

Access

Toyama City has many restaurants. Masu no sushi is sold at the Shinkansen station concourse.
