Shiroika Squid
A signature seafood of Tottori in summer is shiroika. Formally called swordtip squid, it is affectionately known locally as shiroika, or white squid, for its translucent whiteness. The fishing lights of squid boats floating on the Sea of Japan at night are a summer sight of Tottori, and the shiroika drawn to that glow are caught one by one with care. When very fresh, it is exceptional as sashimi.
Highlights
The appeal of shiroika lies in the combination of a melting sweetness that spreads the instant it enters your mouth and a pleasant, crisp bite. Its translucent flesh is beautiful, and its refined taste stands out as sashimi. Grilled or fried, its umami is never lost, and the quality of the ingredient becomes the charm of the dish itself. The freshness of a fresh catch is what creates this sweetness.
Enjoying the Seasons
Shiroika is in season in summer, peaking around July and August. In this period, fresh shiroika lines the markets and eateries of port towns, coloring the summer table. At Karo Port, an event featuring shiroika is held in summer, letting you savor the seasonal taste amid local excitement. Chilled sashimi in the hot season is truly special.
Access and Basic Information
Fresh shiroika can be enjoyed around the ports of Tottori City, starting with the seafood market at Karo Port. Traveling by car from JR Tottori Station to the harbor area is convenient, and eateries attached to the market let you enjoy shiroika just off the boat. People gather especially during the summer peak, so an earlier time slot is recommended.
A Quick Tip
First try it as sashimi to taste the melting sweetness that is natural to shiroika. Having the remaining part lightly grilled lets you enjoy the difference between sweetness and roasted fragrance at once.
