Kawara Soba

This unique regional dish was born at Kawatana Onsen in Shimonoseki. Green tea noodles are piled on a hot roof tile, topped with beef, shredded egg, scallion, and seaweed, and eaten with a warm dipping sauce.

Highlights

The noodles touching the tile turn fragrant and crisp on the bottom while staying tender on top, so one plate offers two textures. The green matcha noodles are strikingly vivid.

Enjoying the Seasons

It is naturally welcome around a hot tile in winter, yet the refreshing dip keeps it popular all year. A plate after visiting the hot spring town is a treat.

Within walking distance of JR Kawatana Onsen Station. Shops in Kawatana Onsen, said to be its birthplace, serve it.

A Quick Tip

Adding lemon and grated radish with chili to the sauce makes the finish wonderfully refreshing.
