Hamamatsu Unaju (Eel)
Hamamatsu and Lake Hamana are the centre of Japan's eel farming industry. The fluffy, caramelised eel on rice is the definitive version.
Sakura Shrimp
Fished only in Suruga Bay in spring and autumn, these tiny pink shrimp are eaten fresh, dried or as kakiage tempura fritter.
Fujinomiya Yakisoba
A B-1 Grand Prix champion noodle dish โ thick steamed noodles with pork, cabbage and bonito flakes.
Shizuoka Oden
A distinct oden tradition โ black fish stock and dark-sauced ingredients served with dried bonito and green seaweed powder.
Wasabi Cuisine
Shizuoka grows Japan's finest wasabi. Wasabi pickles, wasabi ice cream and wasabi soba are available at local shops.
Access
Hamamatsu eel restaurants are clustered around the city. Yui Fishing Port is best for fresh sakura shrimp during spring and autumn.
